For all you who read yesterday’s post…I had no work today!
So instead, I spent it relaxing and being productive:
Yeah…that was pretty much my day.
Lol.
After cleaning my apartment, installing a new foam mattress cover that Mom and Dad sent me, and taking care of a few errands, I dug my car out (took much longer than expected…I actually watched the sun set as I shoveled away…) and attempted to cook chicken sans a youtube tutorial…and to my pleasant suprise, it was AWESOME~
I used a Triple Ginger Teriyaki marinade I found at Mitsuwa in Edgewater, NJ. Low in calories, low in sodium, and super delicious. If you’re on a diet, and want to spice up your chicken breast with minimum caloric and sodium damage, I highly recommend it!
Progress!!!
Today was a good day.

You too funny! I can just imagine you digging around for your car. I am sure the snow was up to your neck. How did you manage?

Took me about an hour and a half of digging. My arms are burning, but I did it all by myself!
And what made me feel internally proud is that this full grown man shoveling his car next to me (his wife watching on the sidelines) kept having to take breaks and tell his wife that this was “harder than it looks.” She just sighed and pointedly looked at lil’ me motoring away with my tiny shovel.

That teriyaki marinade sounds delightful… though my “diet” is really just more of a healthy-eating regimen.
I’m now on a mission to find this thing and use it in my next meal – thanks for the recommendation!
